Nutritionist to discuss cancer-fighting diet in Ventura

Diet accounts for nearly as much cancer as cigarette smoking does, according to Susan J. Speer, the oncology nutrition specialist at the Cancer Center of Ventura County.

"Fortunately, only about 17 percent of Californians smoke, but everyone eats," said Speer, a registered dietitian with a master's degree in nutrition, and a fellow of the American Dietetic Association. "The typical American diet is hazardous to your health."

Nevertheless, cancer is preventable, Speer said.

"Only about 5 to 10 percent of all cancers are genetically determined," she said. "The majority of cancers have their roots in environmental and lifestyle factors, such as diet."

Speer will present "Eat to Beat Cancer" on Tuesday at the SCAN Senior Resource Center in Ventura.

The presentation will discuss "cancer fighters" in food and demonstrate recipes based primarily on fruits and vegetables, whole grains and beans, which Speer says are the foods most commonly associated with a lower risk of cancer."

Visitors will get the recipes to take home, said Steve Lehman, manager and health and resource specialist at the senior resource center.

Speer said she always tries to include a recipe with a vegetable in the cabbage family, such as broccoli, cauliflower or arugula.

"This family of vegetables contains powerful substances that rev up the body's detoxifying enzymes, help cells repair damaged DNA and may even cause cancer cells to die," she said.

Lehman said that as people live longer, the chances of coming down with cancer increase.
