Professional athletes dont get to the top by accident. It takes superhuman levels of time, dedication, and focusand that includes paying attention to what they put in their bellies. In this series, GQ takes a look at what fit people in different fields eat on a daily basis to perform at their best. Heres a look at the daily diet of a male model and personal chef.
Youd be hard-pressed to find two professions whose approach to diets differs more widely than male models and personal chefs. But Rze Traore, a 25-year-old Portland, Oregon native and a graduate of Le Cordon Bleu, makes a living doing both of those things. When hes not flying around the world to cook for guys like Rick Owens or The Wires Michael K. Williams, Traore is busy walking in runway shows or starring in magazine editorials. We asked the multi-talented chef, whos spending part of his summer in New York working at The Nomad alongside restaurant legend Daniel Humm, how a guy who makes lobster rolls and pasta all day maintains a year-round six pack.
GQ: Is it hard to stay fashion-guy lean when youre in a kitchen all day? Do you ever have moments where you step back and say, Im maybe a little bigger than I would like to be?
Rze Traore: I have those times for sure. Especially if youre a model, youre kind of never happy with how you look. You have days where you feel great, but you also have this obsession with being that perfect puzzle. Youll wake up and youll be like, Damn, my cheekbones are filling up! Crazy shit like that. But when I do feel that way, I get on the bike, or I go to the sauna, and Im sorted the next day.
So its easy for you to bounce back from it.
Yes. If I get a modeling job, Ill work for it. At this point in my career Im not doing a lot of running around for castings or whatnot. Its more direct bookings, so Ill know within like four or five days, and thats enough time for me to give the client what they want.
What made you want to be a chef?
I started with the whole chef thing straight out of high school. I was 17 years old, and I wanted to know the whys with food. Why does food act this way when it reaches a certain temperature? No one in my family knew about that. They just knew how to cook good food and that was that.
What were the good foods you remember eating growing up, the things you couldnt get enough of?
It was a lot of stews and very hearty dishes from my dad, because he was the cook at the house coming from the Ivory Coast background and culture. And he cooked fish. That was a big thing. Ive kept that with me: my passion and my obsession with seafood. [My favorite dish growing up] was braised fish with, like, veggies and couscous. It was something that my dad always made.
Why do you think he was so focused on feeding you a clean diet?
I was born with a heart murmur. I had surgery twice, once when I was a newborn and once when I was like 14, 15. So its always been about staying healthy and not eating too much red meat. And during the recovery, the only thing I could do was get in the kitchen and find ways to get myself healed. Thats another way I got into food: trying to be healthy.
Is that the only thing that kept you lean? Were you an athlete in a past life?
Yeah, I was definitely into a lot of sports. I was into track in high school. Did a little swimming, basketball. Im like 64, so I took advantage of those sports that make sense [for tall people].
How did you get into modeling? Where were you discovered?
After Le Cordon Bleu, I found myself in Washington, DC, working for a very good restaurant called CitiZen. Thats when I started to slowly get introduced with the whole modeling industry. And I decided to just move to New York and make my way up the ladders as far as getting signed, and I ended up moving to London, because thats where I started working the most.
Tell me about your day-to-day diet. You work in one field where guys get made fun of for being underfed and another one where you actually feed people. How do you eat, personally?
So I wake up and I automatically put on a pot of green tea, every morning. After that I get on my Peloton bike, just to keep the ticker happy. And from there, I go to the sauna. Im obsessed with the sauna. And then I find myself in the kitchen and make myself a good breakfast.
Before we get to breakfast, what is it about the sauna that you like so much?
Im obsessed with having good skin. And with the sauna, what it does is it gives me a gloss, if that makes sense, and it cleans out my pores. Thats my favorite thing about the sauna. Its kind of like a shortcut for having a good face.
How do you eat during the rest of the day?
For breakfast on a normal day Ill toast up some blue corn tortillas and some sunny side up eggs. And Ill saute some veggies with it. Asparagus is what Ive been doing lately, because thats in season. And if I have some onions in the fridge, Ill go for that. My breakfasts are pretty in and out.
For lunch, whenever I get a break during the day Ill usually do like a seared fish, whether its tuna or black bass or fluke. And I make a little green salad with some dill and whatever else I can find. And thats my quick lunch.
Do you eat dinner or are you on this intermittent fasting kick like everyone else?
For dinner, I eat a lot of veggies. My whole style is being about to go in the kitchen and just free fall. If I go in the fridge and I see, I have these ingredients, thats what Im going to create. Its usually sauted veggies with some spices, and a protein. Which is either chickenI make an amazing whole roast chicken, or sous vide chicken or Ill have some leftover tuna and Ill make a quick tuna salad or tuna nicoise.
This all seems pretty calorie restrictive.
I have this thing: eat what you can afford. Meaning, if I can afford to lose a meal calorie wise, then thats what I feel comfortable with, instead of going crazy over an amount of food that I wont be able to burn.
So youll eat a meal thats, say, 500 calories, knowing that you can burn that off in a workout.
Exactly. I know that I can get on the Peloton and ride for 40 minutes and burn that off. So I can afford that. Two thousand calories? I know I cant do that; it wont be too pleasant. But I have my days where I take breaks. The alcohol is where it gets me.
The alcohol is where it gets all of us. What do you eat on your cheat days?
Im a major, major ice cream fan. About two weeks ago I ate an entire pint of ice cream just sitting! That was like, a big no no. But it was very good vanilla ice cream, and I enjoyed it. I like good stuff, I just tend to avoid it. I also eat a lot of pizza. Im obsessed with it.
How often would you say these cheat days happen?
Probably every two weeks, so Im due for another one soon.
Is there anything youre planning on making when the time comes?
Pancakes. Matcha pancakes are one of the things that Ill load myself up with. And theyre very quick to make. Just rack those up with some good maple syrup and youre golden.
Im sort of surprised its not something more luxurious.
People think chefs make themselves Michelin-starred restaurant food every night. And its the total opposite, because thats what youve been doing the whole day. Its not like you dont think youre worthy or anything, its just you just want to have good food that you know how to make. Like, I could do it, but its not that serious when its just for me.
Is there anything you wont eat?
Pork. Yeah, I dont eat pork.
Is that a religious thing or is it just because of how it affects your body?
Its more about how if affects my body. Now, if I want to try a dish for a client, Ill take a quick nibble. But I never buy pork. It doesnt react well for me. I also do not like cottage cheese. I think its pretty disgusting. Im pretty open minded when it comes to food. But yeah, cottage cheese is a no.
Im glad you mentioned your clients. Who are the coolest people youve cooked for? Rick Owens has made a couple of appearances on your Instagram.
I cooked for Rick and Michele [Lamy, his wife], and the whole Rick Owens corp in Venice. The thing that I love about Rick and Michele is that they are all about a clean diet. Ricks favorite salad is like an avocado salad, and staying fit is his thing. Really loved them, really great people, great energy. Thats who I like to be around.
As far as coolest client? Its the actor Michael K. Williams. This guy has has an amazing career, and he is still the most humble person on earth. Hes definitely one of the coolest clients Ive gotten to work with and be friends with.
What do you do when your clients want something thats rich and super indulgent?
My philosophy with feeding my clients is, Im gonna give you a background of my cooking style and technique, but I can really make anything you want me to make. You know, just because I eat a certain way doesnt mean thats how you have to eat. Im definitely going to make what youre obsessed with or what youve really been wanting, and you can rest assured that Ill do that with the freshest ingredients and in the healthiest way I can.

But wait! This is the queen were talking about. She could have any food she wanted in the world. Beluga caviar. Wagyu beef. Hell, even Cronuts. Youre telling us theres none of that around? The queens not really bothered about food. All she cares about are horses and dogs, he says. The chefs and food and kitchens come last. Theyre still using pots and pans from the 1800s, with the Queen Victoria stamp on them, at Buckingham Palace. Hed even ask if the royals wanted to upgrade their cooking equipment, but theyd refuse. No, no, no, we need the money to buy horses and saddles, he was told.
What about the claim that the queen has four drinks a day? Not soShed be pickled if she drank that much. But when she does drink, its a glass of German sweet wine with dinner, or her favorite drink, a gin and Dubonnet.
The queen, however, does have one vicedark chocolate. She loves the stuff, says McGrady, going as far to call the monarch a chocoholic. It has to be the dark chocolate, the darker the better. She wasnt keen on milk chocolate or white chocolate.

Mice fed tryptophan develop immune cells that foster a tolerant gut
The combination of a bacterium that normally lives in the gut and a protein-rich diet promotes a more tolerant, less inflammatory gut immune system, according to new research at Washington University School of Medicine in St. Louis. The findings, in mice, suggest a way to tilt the gut immune system away from inflammation, potentially spelling relief for people living with inflammatory bowel disease.
Immune cells patrol the gut to ensure that harmful microbes hidden in the food we eat dont sneak into the body. Cells that are capable of triggering inflammation are balanced by cells that promote tolerance, protecting the body without damaging sensitive tissues. When the balance tilts too far toward inflammation, inflammatory bowel disease can result.
Now, researchers at Washington University School of Medicine in St. Louis have found that a kind of tolerance-promoting immune cell appears in mice that carry a specific bacterium in their guts. Further, the bacterium needs tryptophan one of the building blocks of proteins to trigger the cells appearance.
We established a link between one bacterial species Lactobacillus reuteri that is a normal part of the gut microbiome, and the development of a population of cells that promote tolerance, said Marco Colonna, MD, the Robert Rock Belliveau MD Professor of Pathology and the studys senior author. The more tryptophan the mice had in their diet, the more of these immune cells they had.
If such findings hold true for people, it would suggest that the combination of L. reuteri and a tryptophan-rich diet may foster a more tolerant, less inflammatory gut environment, which could mean relief for the million or more Americans living with the abdominal pain and diarrhea of inflammatory bowel disease.
The study is published Aug. 3 in the journal Science.
Postdoctoral researcher Luisa Cervantes-Barragan, PhD, was studying a kind of immune cell that promotes tolerance when she discovered that one group of study mice had such cells, while a second group of study mice that were the same strain of mice but were housed far apart from the first group did not have such cells.
The mice were genetically identical but had been born and raised separately, indicating that an environmental factor influenced whether the immune cells developed.
She suspected the difference had to do with the mices gut microbiomes the community of bacteria, viruses and fungi that normally live within the gastrointestinal tract.
Cervantes-Barragan collaborated with Chyi-Song Hsieh, MD, PhD, the Alan A. and Edith L. Wolff Distinguished Professor of Medicine, to sequence DNA from the intestines of the two groups of mice. They found six bacterial species present in the mice with the immune cells but absent from the mice without them.
With the help of Jeffrey I. Gordon, MD, the Dr. Robert J. Glaser Distinguished University Professor, the researchers turned to mice that had lived under sterile conditions since birth to identify which of the six species was involved in inducing the immune cells. Such mice lack a gut microbiome and do not develop this kind of immune cell. When L. reuteri was introduced to the germ-free mice, the immune cells arose.
To understand how the bacteria affected the immune system, the researchers grew L. reuteri in liquid and then transferred small amounts of the liquid without bacteria to immature immune cells isolated from mice. The immune cells developed into the tolerance-promoting cells. When the active component was purified from the liquid, it turned out to be a byproduct of tryptophan metabolism known as indole-3-lactic acid.
Tryptophan commonly associated with turkey is a normal part of the mouse and the human diet. Protein-rich foods contain appreciable amounts: nuts, eggs, seeds, beans, poultry, yogurt, cheese, even chocolate.
When the researchers doubled the amount of tryptophan in the mices feed, the number of such cells rose by about 50 percent. When tryptophan levels were halved, the number of cells dropped by half.
People have the same tolerance-promoting cells as mice, and most of us shelter L. reuteri in our gastrointestinal tracts. It is not known whether tryptophan byproducts from L. reuteri induce the cells to develop in people as they do in mice, but defects in genes related to tryptophan have been found in people with inflammatory bowel disease.
The development of these cells is probably something we want to encourage since these cells control inflammation on the inner surface of the intestines, Cervantes-Barragan said. Potentially, high levels of tryptophan in the presence of L. reuteri may induce expansion of this population.

How is it used?
Testosterone testing is used to diagnose several conditions in men, women, girls, and boys. Testosterone is the main sex hormone in men, produced mainly by the testicles, and is responsible for male physical characteristics. Although it is considered to be a "male" sex hormone, it is present in the blood of both males and females. (See the "What is being tested?" section for more.)
The testosterone test may be used to help evaluate conditions such as:
Typically, a test for total testosterone is used for diagnosis. The total testosterone test measures testosterone that is bound to proteins in the blood (e.g., albumin and sex-hormone binding globulin [SHBG]) as well as testosterone that is not bound (free testosterone).
About two-thirds of testosterone circulates in the blood bound to SHBG and slightly less than one-third bound to albumin. A small percent (less than 4%) circulates as free testosterone. Free testosterone plus the testosterone bound to albumin is the bioavailable testosterone, which can act on target tissues.
In many cases, the total testosterone test provides adequate information. However, in certain cases, for example when the level of SHBG is abnormal, a test for free or bioavailable testosterone may be performed as it may more accurately reflect the presence of a medical condition. Depending on the reason for testing, other tests and hormone levels may be done in conjunction with testosterone testing. Some examples include:

In men, the test may be ordered when infertility is suspected or when a man has a decreased sex drive or . Some other symptoms include lack of beard and body hair, decreased muscle mass, and development of breast tissue (). Low levels of total and bioavailable testosterone have also been associated with, or caused by, a greater presence of visceral fat (midriff or organ fat), insulin resistance, and increased risk of coronary artery disease.
In boys with delayed or slowly progressing puberty, the test is often ordered with the FSH and LH tests. Although there are differences from individual to individual as to when puberty begins, it is generally by the age of 10 years. Some symptoms of delayed puberty may include:
The test also can be ordered when a young boy seems to be undergoing a very early (precocious) puberty with obvious secondary sex characteristics. Causes of precocious puberty in boys, due to increased testosterone, include various tumors and congenital adrenal hyperplasia.
In females, testosterone testing may be done when a woman has irregular or no menstrual periods (), is having difficulty getting pregnant, or appears to have masculine features, such as excessive facial and body hair, male pattern baldness, and/or a low voice. Testosterone levels can rise because of tumors that develop in either the ovary or or because of other conditions, such as polycystic ovarian syndrome (PCOS).

Males: The normal range for testosterone levels in men is broad and varies by stage of maturity and age. It is normal for testosterone levels to slowly decline, usually after age 30. Testosterone may decrease more in men who are obese or chronically ill and with the use of certain medications.

Men who are diagnosed with consistently low testosterone levels and have related signs and symptoms may be prescribed testosterone replacement therapy by their healthcare providers. However, testosterone supplements are not approved by the Food and Drug Administration to boost strength, athletic performance, or prevent problems from aging. Use for these purposes may be harmful. Alcoholism and liver disease in males can decrease testosterone levels. Drugs, including androgens other than testosterone and steroids, can also decrease testosterone levels.
Prostate cancer responds to androgens, so many men with advanced prostate cancer receive drugs that lower testosterone levels.

We are past 50 and in good health. Since my wife and I eat together, what effect on HER body as a woman will our "eating better for increased testosterone" likely produce?
The dietary recommendations will not likely increase your wife's testosterone levels beyond what is normal for her because the diet just provides the "raw materials" that any body needs to make the hormones it needs...it doesn''t "force" any more testosterone production than is needed.
My body and face look younger than I am. I am in perfect shape. I want to gain weight and increase metabolism in my body. I do regular workouts and am over 30. Could you please suggest how to gain weight and look matured?
Strength and endurance exercises tend to increase muscle mass most efficiently. You should also include high quality lean protein in your diet. You may appreciate how young you look the older you get, but you should also be careful not to gain too much weight too quickly.

IT'S quite common for pregnant women to experience nausea in the early hours of the day, but more women are reporting that they struggle with 'morning sickness' at much later hours. Obstetrician-gynaecologist at ICON Medical Centre Dr Keisha Buchanan says that even though less common, this is completely normal.
Morning sickness, which is the vomiting that occurs in pregnancy, may affect a woman at any time during the day or night. In fact, the term 'morning sickness' may be a bit misleading, as some pregnant women vomit more at night than in the day, and a few women vomit only at night, she explained.
She pointed out that vomiting occurs because of a steady rise in the pregnancy hormones such as beta human chorionic gonadotropin (Beta HCG). This hormone, which is produced during pregnancy, is the one detected by a pregnancy test when positive.
Nocturnal vomiting can be likened to a nightmare because it steals so much sleep time, and for working women in particular, this can be quite difficult.
Vomiting at night does not only disrupt sleep but can cause exhaustion throughout the following day. This can significantly contribute to poor performance at work, loss of days at work, lethargy, nutrient deficiency, weight loss, dehydration, electrolyte derangement and weight loss, Dr Buchanan outlined.
She said that while most pregnant woman tend to experience bouts of vomiting, some women are more prone because of varying existing medical conditions.
Women more prone are those who have gastroesophageal reflux disease (GERD), who have severe vomiting such as with hyperemesis gravidarum, women with twins, triplets and other types of multiple pregnancies, and those with deformities in the stomach/oesophagus for example, a hiatal hernia. In a hiatal hernia the stomach protrudes from the abdominal cavity, where it should be, into the chest cavity, and this gets worse at night and triggers vomiting, Dr Buchanan explained.
However, Dr Buchanan said that no matter what the causes, women don't have to suffer through it. Below she suggests some ways that you can get relief.
1. Modify your diet and pay close attention to what is eaten in the day. Adhering to a bland diet consisting of complex carbohydrates, high-protein meals, and avoiding overeating and caffeine should give you some relief.
2. The regular diet in pregnancy should consist of three regular meals and two to three snacks throughout the day. Try to stay as close to this recommendation as possible.
3. Avoid spicy or greasy meals, carbonated beverages and acidic foods or drinks during the day.
4. Always eat in small portions. Also, avoid gobbling down large quantities of food close to bedtime. This will help to prevent vomiting at night.
5. Have a supper that consists of ginger tea or peppermint tea or ginger biscuits or other foods consisting of ginger. You can also chew a piece of ginger or have ginger- flavoured drinks to prevent or decrease vomiting.
6. Avoid strong odours such as strong-smelling body washes at bedtime, or strong perfumes or lotions, and ask your spouse to avoid exposing you to these, as they can trigger nausea and vomiting.
7. Rinse your mouth thoroughly before going to bed. Practise good oral hygiene such as brushing the teeth and flossing, as this will help to remove food particles. Some food residues in the mouth may trigger the urge to vomit.
8. Avoid getting hungry throughout the day and at bedtime, as hypoglycaemia (low blood sugar) can trigger nausea and vomiting. Have a small snack between meals and close to bedtime.
9. Take your prenatal vitamins and additional vitamins such as B6 25 mg three times per day. This will help to prevent nausea and vomiting at night.
In some instances, however, Dr Buchanan acknowledges that non-medical options may not be enough. She said to support these women there are a number of drugs available.
Medications can help to prevent or treat vomiting such as dimenhydrinate, granisetron, antihistamines, ondansetron, and reflux disease can be treated with proton pump inhibitors such as lansoprazole and antacids. These medications are safe in all trimesters and will not cause birth defects or harm the baby. In fact, they can improve the pregnancy and prevent complications such as stomach bleeding, dehydration, nutrient deficiencies, daytime drowsiness (drowsiness from lack of sleep can increase the risk of accidents during the day). All of these can have potentially serious complications, Dr Buchanan shared.
She also advised women to seek medical attention, especially when vomiting is severe, since not all forms of vomiting are pregnancy-related and could be a sign of gallstones, an inflamed gallbladder, or peptic ulcer disease. Naturally, pregnancy-related vomiting will subside by the early second trimester, although a few women will vomit until the third trimester. In case vomiting develops later in the pregnancy, Dr Buchanan said that medical attention should be sought, because it may be linked to something serious.
Vomiting at this stage may be due to gastroenteritis or reflux disease, but more serious conditions such as preeclampsia (very common), and liver disease (rare) can be heralded by vomiting. Vomiting that starts in the late second or third trimester is rarely ever morning sickness, Dr Buchanan cautioned.

Losing weight reduces the risk of long-term cardiovascular illness and mortality for the majority of patients with type 2 diabetes, but for a small subgroup, weight-loss intervention can lead to dramatically worse outcomes, according to new research published today inThe Lancet Diabetes & Endocrinology.
A team of data science researchers at The Arnhold Institute for Global Health of the Icahn School of Medicine at Mount Sinai reached these conclusions by applying new, advanced machine learning techniques to data collected during a trial that was halted in 2012 because its results lacked statistical significance.
The Arnhold Institute team, led by James H. Faghmous, PhD, Chief Technology Officer at the Institute, reanalyzed data from the trial known as Look AHEAD (Action for Health in Diabetes). They found that, despite the overall null findings of the trial, 85 percent of the study sample did experience a clinically meaningful, significant reduction in cardiovascular mortality and morbidity from the trial's intensive weight loss intervention.
"Our analysis demonstrates that recent advances in machine learning for causal inference can increase the quantity of clinically relevant findings generated from large randomized trials," said Aaron Baum, PhD, Lead Economist, The Arnhold Institute for Global Health; Assistant Professor, Department of Health System Design and Global Health, Icahn School of Medicine at Mount Sinai; and lead author of the study. "As researchers and data scientists, we are always concerned that an overall study result could mask important disparities in benefit or harm among different types of patients, which is exactly what this study revealed. Being able to identify individuals that could benefit from an intervention is fundamental to patient care."
"In addition to its clinical findings, this work shows the promise advanced machine learning methods can have on precision medicine beyond genetics", said James H. Faghmous, PhD, the study's senior author and an expert in machine learning and healthcare.
The Look AHEAD study enrolled more than 5,000 overweight and obese patients with diabetes with a planned follow-up period of up to 13 years. Its intent was to determine whether modest weight loss through a lifestyle intervention reduced the rate of mortality and serious events like heart attacks and strokes. The trial was halted early by the National Institutes of Health (NIH) after finding no difference in the rates of cardiovascular events between the two groups.
"This research strengthens the role for data science and precision medicine as essential tools that can transform the way health care is delivered," said Prabhjot Singh, MD, PhD, Director of The Arnhold Institute for Global Health and Chair of the Department of Health System Design and Global Health, Icahn School of Medicine at Mount Sinai. "Identifying individuals that could benefit from an intervention is crucial for practicing clinicians, while ignoring subgroups that benefit might lead to lack of reimbursement for weight loss programs, which would neglect vulnerable populations."
The team's findings indicated that 15 percent of subjects had substantially increased risk of cardiovascular events such as heart attack or stroke as a result of weight loss interventions. This could be the first suggestive evidence of an adverse reaction to what is generally considered a common-sense and innocuous intervention. This subgroup was defined by a combination of two baseline characteristics: mild or well treated diabetes (HbA1c less than 6.8 percent) and a negative perception of their health status (SF-36 general health score less than 48). The latter is strongly correlated to depression. This subgroup also:

Obesity is a risk factor for numerous disorders that afflict the human race, so understanding how to maintain a healthy body weight is one of the most urgent issues facing society. By 2025, it is estimated that 18 percent of men and 21 percent of women will be obese worldwide.
In the US alone, 68.8 percent of people are already classified as overweight or obese. The UK, meanwhile, has one of the greatest problems in Western Europe 67 percent of men, 57 percent of women and a quarter of children are overweight.
In order to lose and maintain a healthy weight, public health policy typically advises eating fewer calories by reducing the calorie content of food items or reducing portion size, for example. We propose, however, that simply choosing food items with reduced calories is not necessarily the best way to maintain a low weight.
There are hundreds of diets that, for a period, reduce calorie intake and in this way decrease body weight. But the number of those who are dieting at any one time demonstrates that this is not a long-term solution. Every year in the UK, 65 percent of women and 44 percent of men try to reduce their weight, by, for example, decreasing fatty or sugary foods or eating smaller portions.
Surveys also estimate that a quarter of people are always trying to lose weight, or "yoyo dieting". The constant dieting to lose weight, subsequent weight gain, and further weight loss are part of a cycle that repeats itself for these people. Losing weight is much easier than maintaining weight loss, yet for health reasons we need to retain the lower weight.
Fighting biology
Although cutting calories can cause weight loss, it does not follow that if a person returns to their usual diet they will maintain their new low weight. In fact, studies have found that after a low calorie diet, between one and two-thirds of people regain more weight than they had lost initially.
The fundamental problem with cutting calories is that the human body defends its original weight. Evolution has produced a body that anticipates future famine, with the result that when you reduce calorie intake there are strong physiological pressures to replace the lost energy.
For example, dieting causes the gut to release a range of hormones that increase appetite: changes that are still apparent after the diet is over. Leptin which makes one feel satisfied and full has been found to be still reduced a year after dieting has finished, while ghrelin, a hormone which stimulates appetite, remains raised. So even a year after a person finishes their diet, they will feel hungrier than when they started dieting, and still anticipate a higher food consumption than before the diet.
Reducing food intake also reduces the body's metabolic rate and production of body heat. The resulting lower energy consumption helps a more thrifty body to return to its initial weight, as fewer calories are needed to fulfil these basic bodily functions.
There is also increasing evidence that dieting changes taste sensitivity. For example, those who have recently lost weight rate the taste of sugar as more pleasant.
When low calorie versions of foods are unknowingly consumed, there is a subconscious tendency to replace lost calories by changing other aspects of the diet. In one study, researchers gave artificially sweetened drinks to unknowing participants who were used to drinking sugary drinks. The scientists found that although on the first day the participants consumed fewer carbohydrates, from the second to the seventh day, the overall energy intake was unaffected: they made up for the lack of calories in the sweetened drinks with energy from other foods and beverages.
The overwhelming message is that the price of freedom from obesity is eternal vigilance. When the initial attention associated with dieting dissipates, basic biology ensures that weight is regained. For the weight-conscious, actively counting calories can be successful, but losing weight and keeping it off can only work if one's calorie intake becomes an issue high on the agenda.
The passive removal of calories for example, when a manufacturer reduces portion size, or a government requests that chocolate bars should not contain more than 250 calories will only be influential if an individual persistently monitors overall calorie consumption. Without this psychological engagement, basic human biology will take over and any lost calories will be replaced.
